So...

If your family is like mine, you have a lot of stuff leftover from Thanksgiving. Thought we might start a little thread to throw around ideas of what to do with 'em.

To kick things off... two ideas for leftover turkey:


jook / congee

A family tradition in our house: turkey jook / congee. You throw in the chopped turkey carcass, simmer it on very low heat with water and rice. I ate so much of this growing up around the holiday season that the regular, non-turkey flavor of jook/congee (pork) still strikes me as odd.

Another easy recipe to make - just shred the remaining turkey meat via whatever method you like (I prefer fork + hands), throw in a pot with some salsa and canned diced green chiles over very low heat. After mixing it around and making sure all the meat has been coated, I also like to chuck in some black beans.

I used medium-sized corn tortillas (I prefer than to wheat). I warmed them up with the whole moist paper towel trick over the top of a stack of tortillas + about one minute in the microwave. I stuffed the tortillas, rolled them up, and put them in a glass tray (I used the toothpicks to keep 'em rolled up). Added green enchildada sauce over 'em, and then grated cheese. Threw 'em into the oven at around 375 for 'bout 10 minutes.

My mother threw out the stuffing this year, but what I like to do is to crisp it up in a dry pan for a few minutes then throw it in with super hot reheated rice. Then I mash it up a little and eat it like some ghetto-lookin' fried rice.

Sometimes I throw an egg in, but then it turns out really... well not chewy but its not as light.

Just goes to show you that pretty much anything + rice is good.

Well, I think if it was with glutinous rice as opposed to the Jasmine rice my momma's been buying, it'd be too "heavy".

I feel unhealthy when I eat the stuffing though, every time I have it its so salty but yet comforting in its saltiness. Its sticky too so I try and use the rice to keep it less like peanut butter and more like the globs of cookie dough in Ben'n Jerry's Cookie Dough ice cream.

I just try to "thin out" stuffing so I can eat it without that uneasy heart feeling. And I know I'm a fatass when I just used food to describe another food.

'Lita, I know what you're saying about stuffing. It's good, but when you eat too much, that shit is too much to digest, either you get heartburn or plugged up. If there's anything I learned from college dining halls, moderation and pace yourself.

TMI alert: Pregnancy slows down your digestion because your body is sucking out all the nutrients out of everything you eat for the baby. I've been eating a truckload of fruit and it took 4 days to process Thanksgiving dinner.

nskripchun, I introduced to my mom turkey jook this year and she totally loved it. She thought it was awesome waking up to the smell of turkey jook from the slow cooker. I don't know what gets me more excited, Thanksgiving turkey or turkey jook the next day.

I took the turkey carcass, and all the other turkey bits like the neck and giblets to make 8 quarts of turkey stock. Thank god stock keeps for a long time in the freezer! While I was a soup stock making, I also made 6 quarts of chicken barley stew for a sick friend, so it was a soupy black Friday morning for me instead of shopping. My brother used the Turkey meat today to make an Indian turkey curry to have with some rice...

I usually intercept the carcass and make stock. Depending on how I feel, I'll end up with between 2-4 cups of it because I like reducing it down to something really gelatiny and rich tasting. Then I'll either use it in sauces later on, or sometimes I'll water it down and use it in a risotto.

The leftover meat is usually inhaled by my brothers and anything left over from that is turned into dog food.

Yeah, usually when I make beef/pork or chicken stock I reduce it down to a demi-glace state if I don't intend to use it immediately since it keeps longer, you don't need to freeze it, and it is a lot more friendly on the fridge space than 8 quarts stock.

LOL!!

We had my hubby's friend cook the turkey we got. So, we had a good portion of the white meat and they had the leftovers to deal with. So, all we have to do is eat the meat that they sent over with him. I may just have some Sweat potatos from the freezer. We did not have any stuffing this year. Sucks I know. But, I may buy some to finish off the turkey.
