Also known as "Cou Doufu."
At its stinkiest, cut up and before it's cooked:

Deep fried in a pot full of oil:

You have to cook it outside because it stinks too bad:

All done! You have to put it on paper towels to soak up all the damn oil:

I don't think I've ever had that. Is it one of those acquired taste things like stinky cheese or natto?

Wait, so just let it sit there until it stinks, then deep-fry it?

Dunno, I loved it the first time I had it. I don't know if I'd say that it's like stinky cheese, but it definitely has a distinct flavor. It's good on its own, but the sauce you use is very important.
I'd say that the smell takes getting used to more than the taste.

You have to leave it outside in the sun for several days. Covered, of course. You can't make this in the winter, not if you're going to make it yourself. Or you could buy it from some Chinese restaurants (not the takeout places). A lot of places will sell it, but won't cook it in their kitchens because it'll stink up the entire place.

What kind of sauce do you use? And do you drizzle it over the tofu after it's cooked or dip?

Always dip. ALWAYS. Well, I guess you can pour it on top.
Whatever sauce I use always has soy sauce in it. Add in some vegetarian oyster sauce, some hot chili sauce (you know, the one with the picture of the rooster on the bottle), and some diced scallions for some kickass shit. You can add in some diced garlic, too, but that might taste just a little weird. You can also put in some of that Chinese BBQ sauce that comes in the small silver cylinders.
When I want to keep it simple, I'll do just the soy sauce with diced garlic, although that doesn't mesh with the stink as well.

My dad loves that stuff. The kind he bought from the Chinese grocery was pre-rotted, brown and crumbly. When I came home and smelled it, I freaked out because I thought a sick possum had crawled under our house and died.

I remember walking by restaurant stalls in HK that specialize in this stuff. The smell hits hard. I've never had the guts to try it though. This stuff.. and durian, never tried it

What a lot of people do when making stinky tofu is they'll wrap the tofu in a plastic bag and cover the bag in pig shit for a day or so to add to the stink. Some really old-fashioned cooks will piss on the tofu before cutting it.

Haha.. wow, that really doesn't convince me to want to try it. Reminds me of pig intestines. Compared to China, and NA, it's alot more, as my dad would say, "flavourful, because they don't clean it as well". Does this stinky tofu have the same consistency as regular tofu, or more like fermencted in chili tofu?

It depends on how long you want to cook it and how crispy you want it. Otherwise it's just like regular tofu, although the pig shit does soften it a bit. I didn't have any pig shit available at my place, so I had to use dog shit which softens it a lot more.

what about cat shit? theres lots of it on my lawn from the abundance of cats that live in the golf course across the street.
I've never had it. I do want to try it though. I like foul smelling food...or all food for that matter. My mom tells me that the stinker the better.
Durian is not bad, its actually really good, but it gives me "hot air".

Now, that's just silly. You don't just use any kind of feces. You can use pig shit and dog shit because people eat pigs and people eat dogs. No one eats cats. All that stuff about Chinese restaurants cooking up cat is bullshit anti-Asian propoganda.

Dude, I was gonna say.
From what I've heard, they use rotting veggies to stink it up. Where the hell did you get shit and piss from?

I just figured that if people are going to be scared of Chinese cuisine, then they might as well have something to really be scared of. All you need to do to make it stink is leave it exposed to air in a hot place.

You don't know what you're missing out on.
Although it will stink up the house if you cook it indoors. But it's so damn good. You don't even understand.

Deep fry it. Get a pot, fill it with oil, let it boil (I'm a poet, I don't know it), and drop those suckers in. As soon as they turn a golden brown, they're done.
