I like this (http://www.amazon.com/Chinese-Kitchen-Techniques-Ingredients-Authority/dp/0688158269/ref=pd_bbs_sr_2/103-4094134-5932648?ie=UTF8&s=books&qid=1174358405&sr=8-2) one.
And this one (http://www.amazon.com/Wisdom-Chinese-Kitchen-Classic-Celebration/dp/0684847396/ref=pd_sim_b_1/103-4094134-5932648?ie=UTF8&qid=1174358405&sr=8-2) too.

My favorite Chinese home cooking cookbook, "Chinese Cooking Made Easy" (http://www.amazon.com/Chinese-Cooking-Made-Easy-Wei-chuan%C2%B0s/dp/0941676269/ref=pd_bbs_sr_1/102-4583100-7025723?ie=UTF8&s=books&qid=1174387402&sr=8-1)only has 3 soup recipes (corn soup, meat+veggie soup and tofu with egg soup.
I did notice the same Wei-Chuan series have a cookbook called, "Soup, soup, soup" (http://www.amazon.com/Soup-Mu-Tsun-Li/dp/0941676501/ref=sr_1_23/102-4583100-7025723?ie=UTF8&s=books&qid=1174386706&sr=1-23)
China:The Beautiful Cookbook (http://www.amazon.com/China-Beautiful-Cookbook-Kevin-Sinclair/dp/0002159996/ref=sr_1_1/102-4583100-7025723?ie=UTF8&s=books&qid=1174386874&sr=1-1) has more fancy recipes but it's organized into food groups or regions, making it difficult to look up soup recipes.
I've heard good reviews of Irene Kuo's cookbook, "The Key to Chinese Cooking" (http://www.amazon.com/Key-Chinese-Cooking-Irene-Kuo/dp/0394496388/ref=sr_1_1/102-4583100-7025723?ie=UTF8&s=books&qid=1174387151&sr=1-1) which is more Cantonese.
