sesame oil
sesame seeds (optional)
Prepare large pot of boiling water, salty enough to taste like the ocean. Wash spinach, make sure to remove all grit. Very briefly blanch spinach in boiling water until it wilts. Once wilted, remove and wrap in kitchen towel and squeeze out all of excess water. Take ball of spinach and cut into three hunks. Drizzle with sesame oil, according to taste and using hands, mix oil into spinach. Season to taste with salt and pepper. Garnish with a topping of sesame seeds. Serve at room temperature.
